One of my favorite comfort foods, fresh sausages with a thick onion gravy…. absolutely delicious with some garlicky mashed potatoes!



    Step 1

    Cook the sausages in a little olive oil in a pan until golden brown. Remove.

    Step 2

    Add the sliced onions and garlic and cook until translucent. Sprinkle in the flour and cook for a few seconds. Pour in the wine and the tomato paste and stir until combined. Add the stock cubes, sugar, spices and herbs and about 2 cups of water.

    Step 3

    Bring to the boil, lower the heat and add the sausages. Season with salt & pepper.

    Step 4

    Simmer, covered over gentle heat for about 40 to 50 minutes.

    Step 5

    Serve with garlicky mashed potatoes.
