OMELETTE ROLL WITH PROSCIUTTO & RUCOLA

Whether it is for breakfast, lunch or served as a snack, this quick and easy omelette is delish! You can add Parmesan to the eggs before frying and if you like some fresh/dried chilli and/or chopped chives.

    Step 1

    Break the eggs in a small bowl and beat gently. Add some snipped chives and season.

    Step 2

    Heat a large non stick frying pan and pour the eggs into it. When the eggs start to set, flip the omelette over so it will start cooking on the other side.

    Step 3

    Whilst still on the heat, drop small pieces of cheese on top so this will start melting, making it easier to spread. Turn the heat off and slide the omelette onto a plate.

    Step 4

    Using a small spatula, spread the melting cheese all over the omelette.

    Step 5

    Scatter the rucola over the cheese, sprinkle with pine nuts if using and then cover with the slices of prosciutto.

    Step 6

    Roll up the omelette gently and loosely.

    Step 7

    Serve garnished with fresh chives or chopped parsley. Equally delicious served cold.
