As they say, life’s too short for difficult desserts! This cake is seriously sooo good! And can be enjoyed by non Celiacs too! And it cannot be simpler to make!

    Step 1

    Preheat oven to 170C.

    Step 2

Grind the almonds with two tbsp of the mais flour until fine. Place in a bowl with the rest of the mais, together with the baking powder and salt. Combine well.

    Step 3

In another bowl, beat the butter with the sugar until creamy. Start adding the flours whilst beating, followed by the eggs, one at a time, then add the essences, yoghurt, zest and limoncello. Continue beating until smooth.

    Step 4

Pour the batter into a greased cake pan and bake until a skewer comes out clean when inserted in the centre of the cake. Leave to cool before dusting with icing sugar.

Hi, I'm Jacqui, creator of The Blender and Senza G. I was diagnosed with Celiac disease in 2012 and since then, gluten free cooking has become a passion of mine. I just love food, experimenting and creating new gluten free recipes or re-inventing old favorite ones so I can still enjoy what I used to love before. Being Celiac makes cooking more challenging but with loads of patience, intensive research and a burning desire to learn more and more, living the Gluten Free lifestyle has become much much easier. My mission has been that gluten free food should taste good. Gluten Free does not mean taste free and I will keep on working to discover new ways of making it even better! ❤️
