LARGE RÖSTI WITH PROSCIUTTO CRUDO & EMMENTHAL CHEESE

A traditional Swiss dish, Rösti is similar to a potato pancake. Usually they are made smaller and then topped with smoked salmon. This is a filled version with Prosciutto and Cheese sandwiched in between.

Ingredients

    Directions

    Step 1

    Boil the potatoes in their skin until just tender. Drain and leave to cool.

    Step 2

    In a small pan, saute the onion and garlic until translucent.

    Step 3

    Peel the now cooled potatoes and grate them into a large bowl. Add the onion, garlic, parsley and herbs. Season with salt & pepper. Combine gently.

    Step 4

    Take a non stick frying pan and place half of the potato mixture. Put the prosciutto slices on top, followed by the chopped sundried tomatoes and the grated cheese.

    Step 5

    Top with the rest of the potato mix, pressing it down gently with a spatula so the filling is covered. Cook for about 10 minutes. Place a large plate over the frying pan and quickly turn it over onto the plate. Slide the rosti back into the pan and cook the other side until golden brown.

    Step 6

    Can be eaten on its own with a salad or else can be served as a side dish.
