Preheat your oven to 200°C
In a bowl mix the following ingredients together: Water, Cream, Lupin Flour, Almond Flour and Eggs. Mix all the ingredients very well. You can also use a hand mixer or blender for this step. Make sure that no flour lumps are left in the batter. Set a side.
In a dish (mine was 20/25cm diameter dish OR you can use a small rectangle or square dish as well) add your ghee in the bottom and the sausages. Place in the oven and cook for 5 minutes.
Once the ghee is melted and 1 side of the sausages are cooked, Add the onions to the dish, turn over the sausages and cook for another 5 minutes.
Once the sausages are cooked from both sides, open the oven and add the batter to the dish. Make sure that this step will be done fast as possible as you do not want the ghee to drop in temperature. Place the dish back in the oven and leave the oven closed, and cook for 20mins. DO NOT OPEN THE OVEN.
In these 20mins the batter will rise and you will have the best Toad in the Hole. Once all golden brown, take it out of the oven and let it rest for a few mins. Any ghee lest in the pan will be absorbed by the Toad in the Hole.
Serve with your favorite Gravy.
