Directions
take 460g of strawberries (cleaned and chopped) add them to a pan with the water and 60g of sweetener. Cook them until all strawberries are mush and the water had reduced. This will take approx. 10 to 15 mins.
while the strawberries are cooking in another bowl add the cream and the left over of the sweetener. Whisk with a mixer until the cream is whipped. Whip until stiff peaks. Set a side once done.
Once the strawberries are done, pass them through a sieve. Mash any big pieces left through your sieve.
Place the strawberry puree/liquid over the heat again and add the Vege-gel powder and whisk well. Until all the powder dissolves.
Take the whipped cream, start again the beater/mixer and start adding the strawberry hot liquid to the whipped cream. You can also add some food coloring if not satisfied with the color.
Once all combined well ; separate in 6 different containers and place in the fridge to cool down for an overnight.
During the over night the mixture will become thick and hardens a bit.
Before serving add the GoodGood Blueberry jam on top (120/6 = 20g approx. 1 tablespoon) and add your desired decorations.
Conclusion
Good Good Blueberry Jam is a KETO friendly Jam. The tartness will complement the sweetness of the dessert.
