A cake you will make time and time again as it is so easy to prepare and so delicious!



    Step 1

    Grate two of the apples and put in a pan. Slice thinly the other two. Place these slices in a freezer bag, add a tbsp of extra gf flour and shake gently till coated. Set aside. Add a tbsp of the sugar, butter, some cinnamon, the zest, the juice and the Cointreau to the grated apples in the pan and cook over low heat for a few minutes.

    Step 2

    In the meantime, using a hand held mixer, beat the eggs with the sugar until light, add the yogurt, vanilla essence (if using vanilla powder mix it with the flours beforehand) and combined flours, (gf flour plus almond flour), baking powder and a pinch salt. keep mixing until combined. Now add the apple mixture and combine well.

    Step 3

    Turn half of this mix into a lined and greased baking pan. Arrange the apple slices on top and pour the rest of the mix to cover. Bang pan gently on the counter so there will be no air bubbles. Sprinkle the top with flaked almonds.

    Step 4

    Bake in a preheated oven at 180C until golden. Insert stick in middle to ensure cake is done

    Step 5

    When cool, dust top with icing sugar.
