Edamame , Cranberry & Chickpea Rice Salad

Simple, fresh, adaptable and light – great for summer.  Can go with any main course and is quick and easy to prepare.  Good for vegetarians too!





    Step 1

    Combine well all the dressing ingredients.

    Step 2

    Boil the rice according to instructions on package. Run under cold water when boiled. Drain well.

    Step 3

    Mix all the ingredients with the rice and then pour over the dressing. Toss to combine.

    Step 4

    Serve slightly chilled.
