Coconut, Lemon and Almond Cake with a Lemon Glaze

Another one of those very simple, fool proof cakes to make, which always turns out so good! You can bake it in a loaf pan or a round cake tin, as you prefer. I like it in a loaf tin as looks better sliced this way.

    Directions

    Step 1

    Preheat oven to 170C.

    Step 2

    Grind the almonds with two tbsp of the mais flour until fine. Place in a bowl with the rest of the mais and coconut, adding the baking powder, the baking soda and salt. Combine well.

    Step 3

    In another bowl, beat the butter with the sugar until creamy. Start adding the flours and coconut whilst beating, followed by the eggs, one at a time. Add the essences, yogurt and the zest. Continue beating until smooth.

    Step 4

    Pour the batter into a greased cake pan or loaf tin and bake until a skewer comes out clean when inserted in the centre of the cake. Leave to cool slightly.

    Step 5

    You can either leave it simple, by just dusting the top with icing sugar or else prepare the lemon glaze and drizzle it on top, garnishing it with some fresh fruit and more lemon zest.

    Step 6

    To make the glaze, put the icing sugar in a small bowl and squeeze some drops of lemon juice until you have a thick but pouring consistancy. It cannot be too runny. Add more sugar if you see it is too runny. Add the teaspoon of butter and put it in the microwave for about 30 sec until the butter melts. Beat it with a fork until it is smooth. Drizzle over the cake immediately and sprinkle the top with the extra lemon zest.
