Mmmmmm…. perfect for the hot summer months! Deliciously healthy too! The vodka is option, but it then turns this into a great adult starter!

    Directions

    The prep is approx 20 mins in all, however it requires chilling time.

    Step 1

    Put all the above ingredients in a food processor and pulse until everything is combined. If you prefer it smooth, then blend rather than pulse. Chill for at least one to two hour before serving. Serve garnished with slices of cucumber and mint leaves.
