Mmmmm perfect for the summer months! Deliciously healthy too! The Vodka is optional, but it turns this into a great adult starter!



    This would serve more people if served in shot glasses.

    Step 1

    Put all the above ingredients in a food processor or blender and pulse until everything is combined. If you prefer it smoother, then blend rather than pulse. Chill for at least one to two hours before serving. Serve garnished with a little finely chopped tomatoes and cucumber and a sprig of mint or leaves and a slice of cucumber or with a simple celery stick.
